How To Cook Shirataki Noodles & Shirataki Pad Thai Recipe? I’ve created a light keto version of shirataki pad thai with grilled chicken and a delicious and bright sauce that’s easy to make. The sauce is delicate and fresh, yet full-flavored. This dish tastes great whether it’s enjoyed hot off the stove or as leftovers eaten cold right from the fridge. It makes a wonderful option for your weekly meal preps or as an easy weeknight meal.

What Are Shirataki Noodles?

Shirataki noodles are made from the Japanese konjac. These translucent, gelatinous noodles consist almost entirely of water and glucomannan fiber. Shirataki noodles a.k.a. miracle noodles, konjak noodles or konnyaku noodles is an ingredient popular in Asian cuisine because Shirataki noodles are low calorie and carb.

Types of Products

You can find all sorts of products using glucomannan: noodles, fettuccini, penne or even rice. My favourite ones are noodles and rice because the texture gets easily mixed with other ingredients, minimising the rubbery sensation. I use Chop Stick and Miracle Noodle, both of which offer a wide variety of products to choose from.

How to cook shirataki noodles?

    1. Drain the shirataki noodles, discard all the water and place the noodles in a large sieve and wash well under running water.
    2. Transfer into a pot with boiling water and cook for 3-5 minutes. This step is important for removing the unpleasant odour.
  1. Add 1 tsp salt.
  2. Place a large cast iron (preferably) or a non-stick skillet on medium-high heat. When skillet is hot add drained shirataki noodles and stir gently for approximately 3-5 minutes. There will be a lot of steam and that’s what you want to achieve – remove as much water as possible without drying them out. If they become too dry, they will significantly reduce in size. Using tongs, you’ll need to turn the noodles to avoid that. This step is important for their texture.
  3. When done, place in a bowl and have it ready for a stir-fry.

Shirataki noodles can be purchased online at Iherb, Amazon, or other independent grocery stores.

How to cook Shirataki Pad Thai?

  • Whisk together thoroughly in a small bowl 3 tbsp oyster sauce, 1 tbsp soy sauce, 1 tbsp raw honey, 1/2 tbsp ginger powder, 1/2 tbsp paprika powder and 1/2 tbsp chili flakes, 2 tbsp cashew paste.
  • Heat up oil in a skillet or pan over medium heat. Add in garlic, onion, red onion and sautée briefly until it just starts to brown.
  • After that, add pad thai sauce and grilled chicken and cook for 2-3 minutes.
  • Add in prepared noodles, tossing to coat in the sauce. Add carrots, bok choy and a pinch of salt, continue stir frying for about 2-3 minutes until all ingredients are well combined.
  • Garnish with scallion, parsley or cilantro and fried onion.
  • Serve immediately with fresh lime.

What do they taste like? Shirataki noodles are actually taste-less and will take on the flavors of the dish. Texture-wise is where they vary, as they are more rubbery than your traditional noodles.

How to make simple grilled and marinate chicken?

  • Firstly, Cut the chicken breast (250gr) into 1-inch (2.5-cm) pieces and combine 1 tbsp paprika powder, 1/2 tsp salt, 1 tbsp garlic powder, 1 tsp black pepper, 1 tsp thyme powder, 1/2 lemon and marinade ingredients in a bowl or freezer bag at least 30 minutes.
  • Secondly, preheat grill to medium high and then put the chicken and grill, basting with reserved marinade until is cooked through (6 minutes per side or until no pink remains and chicken reaches 165°F).
