How to do it?
Healthy Vegan Burger is a good idea for lunch, dinner or take away meal. These veggie burgers are hearty and satisfying, and feature an irresistible combination of flavors. They start with a base of chickpeas, edamame, mushrooms and sweet potatoes. They’re a little sweet and a little spicy, in the best of ways.
Super healthy vegan burger! Grillable, flavorful and extremely satisfying, this is a burger that vegans and non-vegans alike will enjoy!
INSTRUCTIONS – PREPS FOR VEGAN BURGER
- Heat skillet over medium heat. Once hot, add oil and 1 chopped medium onion. Season with a bit of salt and pepper and sauté for 3-4 minutes, or until onion is fragrant, soft, and translucent.
- Add 30-50gr mushroom and 1 chopped bell pepper. Remove from heat and set aside. Let cool and move onto the next step.
- Add 240gr chickpeas to the food processor with 240gr edamame. Process until well mixed in. You might have to stop a couple of times to scrape down the sides and start it up again before it will start to mix properly. Transfer to the mixing bowl.
- Add handful of chopped fresh parsley, 1 small roasted sweet potatoe, chickpeas and edamame mixture, bell pepper mixture, 8-10tbsp whole grain flour, half of lemon juice, 1tsp light soy sauce, 1tsp salt, 2tsp black pepper, 1tsp thyme, 3tbsp cashew paste, 1tsp corriander, 1tsp sesame seeds and 1 chopped scallion to the mixing bowl and stir until slightly mixed. Then get in there with your hands and then either form each section into a burger shape with your hands or pat down into a round cutter to make a nice flat patty shape.
- Add 2-3tbsp olive oil to a frying pan and then add the patties. Fry for 5 minutes on medium high heat or until golden on each side for about 2-3 minutes per side.
- Place patties on a parchment paper lined baking sheet and bake at 180˚C for about 8-10minutes.
- Remove burgers patties from the oven to let cool slightly, and prepare any other toppings/sides at this time (such as grilling/toasting your buns).
- Serve on hamburger buns with lettuce, sliced tomato, vegan mustard, vegan cheese, tomato sauce and fried shallots.

If you’re cooking on the grill then make sure the grill is lightly oiled so the burgers won’t stick. They’re ready when they are nicely browned on both sides.#Tip2
To freeze for later, cook burgers as instructed on grill or skillet. Then set on a baking sheet or plate and freeze. Once frozen completely, seal in a freezer-safe bag or container and store for up to 3 weeks.
