How to do it?
Typically, Jajangmyeon includes lots of vegetables such as onion, green cabbage, zucchini, and potato. Onion and cabbage, especially, give the jajang sauce a delicious sweetness. I didn’t use potatoes in this recipe, but you can if you want. Jajangmyun is delicious and satisfying but inexpensive to buy or make, so it’s a favorite home-cooked or takeout meal among almost all Koreans.
Perfect for dinner and leftovers. This Jajangmyeon recipe is easy to make and SO delicious – loaded with grilled chicken and vegetables and topped with fresh cucumber. Your family with love this yummy complete meal in one bowl!
WHAT KIND OF NOODLES DO YOU USE?
Normally, people use fresh wheat flour noodles. They are thicker but smaller than udon. And, you can purchase them at Asian stores. You can find ready-made fresh noodles in the refrigerator section of Korean markets, which are preferred. There are also frozen and dried noodles. I prefer fresh noodles for this Jajangmyeon.
What is jajangmyeon?
Jajangmyeon, also known as Korean black bean noodles, is a hugely popular Chinese-Korean dish. There is a very similar Chinese dish called zha jiang mian, which literally translates to fried sauce noodles. However, the sauces are not the same, so you can’t sub one for the other!
Ingredients for jajangmyeon
- Chunjang – Black bean noodle sauce which is the base of the dish
- Zucchini
- Onion
- Cabbage
- Green scallions
- Chicken
WHERE CAN I BUY KOREAN ROASTED BLACK BEAN PASTE?
It should be available at more Korean or Asian grocers. It should look something like the below.
INSTRUCTIONS
Prep fresh ingredients
- Cut the onion and cabbage into rough cubes.
- Cut the cucumbers into thin, long strips for garnish.
- Cut the zucchini into small pieces.
Fry black bean paste
- Put black bean paste into the frying pan. Pour 1/2 cup of olive oil in. Turn on medium-low heat. Make sure to move to paste around while the oil comes up to a boil.
- Once the oil starts to sizzle with bubbles, fry for another 30-40 seconds.
- Then take out the fried paste and place it in a bowl. Pour out any excess oil from the bowl and set it aside.
Make Jajangmyeon Noodles
- Put 2 Tablespoons of sesame oil in a large frying pan. Place the frying pan on medium heat. Then put in the sliced spring onion pieces.
- Once spring onion starts to sizzle. Next, add the onion, zucchini, and cabbage.
- Then add the fried black bean paste, along with the coconut sugar. Stir in the black paste and coat all of the vegetables.
- Then add two cups of water into the mixture.
- While the pot starts to re-boil, take out a small bowl and make starch water: Mix in 2 tablespoons of corn starch with 5 tablespoons of water.
- Once the pot is boiling, put this starch water into the sauce. Don’t add all of it at once. Add a little and see how much more you need to thicken up into the consistency of a curry sauce.
- Then add grilled chicken that you already made before. Or you can fry the chicken in the same pan before fry the spring onion.
- Let it gently simmer for 5-8 minutes on medium heat. Then turn off the heat. Serve with the noodles and garnish with cucumber and sesame seeds.
